This Single Origin Matcha is just a pure work of art from our producers and the tea master at Matcha Botanicals.

The tea shrubs producing this ceremonial quality are grown on exceptional plots, ideally exposed, with a unique soil that forces the plant to give the best in its leaves, and ground at the thinnest level attainable for a Matcha.

The result is one of rare quality: a perfectly balanced aromatic power with marked vegetal notes, a creamy texture with abundant foam, a bright emerald green color, a scent in which can already be perceived its umami.

Once harvested, the leaves are washed, steamed to freeze their aroma, then dried in large streams of hot air. The milling process always takes place less than 30 days before this Matcha arrives in your first cup, giving incomparable freshness. For this uncompromising quality, the extremely thin grinding is carried out with very low output grinding wheels: only 20 grams per hour per wheel are produced.
At this stage, the temperature of the grinding wheels is regulated and monitored extremely precisely: this is essential to preserve its natural qualities and to obtain the finest possible grinding. 

The leaves were harvested in early May, which is the best quality harvest time of the year, and only the youngest leaves are selected. It therefore contains the maximum amount of chlorophyll, antioxidants, vitamins and minerals, as can be expected.

        How to prepare it?

        You don't even need milk. The incomparable sweetness of Ceremonial Extra-Young Shoots Matcha Vintage 2020 is such that it lends itself particularly well to a preparation with water. Rediscover your morning ritual.

        Its very fine aromatic profile is best highlighted by the receptors in the middle and back of your tongue. The umami notes, its roundness and its vegetal freshness will emerge without filter, think about it during your tasting. 😊

        • For an "Usucha" matcha, that is to say the most common, you will need 2g of matcha (half a "teaspoon-full"). Place the powder in a clean bowl and dry, then add the same amount of water as the volume of matcha: a few drops are enough. Take your bamboo whisk, and by making circular movements along the sides of the bowl, brush the matcha and water in order to break up the lumps and obtain a thick cream. Take advantage of the vegetal aromas that emerge at this stage 🤤. Then add 150ml of hot water at 70 degrees and continue to beat with your bamboo whisk until the creation of a fine and delicate foam. It is recommended for this stage to beat from left to right in a perfectly straight and very energetic way, and not with circular movements.
        • For a Koïcha (strong and creamy matcha) you will need 4 grams of matcha and 50 ml of water. The procedure is the same as for Usucha.

        • To get water at exactly 70 degrees 💦, mix some cold water with boiling water: 1 part cold water with 2 parts boiling water should give you the perfect temperature. 

        • The water temperature should not exceed 80 degrees, otherwise the matcha will develop bitterness. Its precious nutrients and subtle taste should not be cooked!

        Be careful when transporting an open jar! We advise you to put it very carefully in your bag / suitcase so as not to shake the matcha powder inside the jar. Otherwise, it is likely that the powder will fall into the area between the jar and the lid, then when opening the powder may escape, which would be particularly pity. 

          How to choose your matcha?

          There are 3 clues by which you can easily determine the quality of a matcha: 

          • The colour : must be bright and lively. If the matcha has an emerald green color it means that it has been stored and transported with care, without contact with oxygen and daylight, so the tea has retained all of its properties. If the matcha has a dark or dirty yellow color it means that it is simply not pure matcha or that it has lost its properties due to interaction with oxygen or sunlight. For this reason, after purchase never pour matcha into a transparent jar and store it in a dry and dark place.

          • The perfume : it must be pleasant, soft and at the same time saturated. If matcha smells like dry hay with hints of bitterness / seaweed (fish) or jasmine (like Chinese green and white teas), then this variety has nothing to do with real matcha or it has lost its properties during processing or storage.
          • Taste : The taste of a good matcha is sweet, light. It certainly shouldn't taste like fish or seaweed! The taste of matcha depends greatly on the variety and the season when it is harvested. The May harvest has a deeper, rich taste and sweet aroma, and respectively, contains the highest amount of antioxidants and chlorophyll. Harvested later than July, matcha may have bitterness and it contains fewer vitamins and minerals than in the early varieties.

          Très bon matcha

          La couleur est d'un vert très pimpant, particulièrement joli ! Gage de sa superbe qualité. pour ce qui est du goût je suis également fan, ça m'apporte une énergie douce sans me rendre nerveuse, je ne peux pas en boire au réveil car en étant à jeun le matcha m'a toujours donné des nausées en ce qui me concerne... Mais ma tasse de matcha l'après-midi est devenu un vrais rituel quotidien que je ne rate jamais! En ce qui concerne le contenant il est assez basique, c'est du plastique, bien que ce soit solide.

Le verre est épais et il résiste bien mais on ne sait jamais ! ;)

          Très belle couleur verte éclatante, légère odeur agréable, le tout dans un contenant en verre bleu foncé plutôt opaque pour filtrer la lumière. Je le bois en Matcha Latte avec un peu de sirop d'agave parfait pour débuter ma journée.

          Très doux, très végétal, vert brillant et éclatant, pas la moindre amertume et très facile à faire mousser. Nécessite un dosage un peu plus élevé que recommandé pour avoir un goût plus prononcé, toujours sans amertume et supporte de façon robuste une eau à 80°. Après une demi vie en Corée et au Japon, c'est le plus proche et abordable des bons matchas locaux. Je recommande vivement. Hate de goûter un "grands cru" .

D’une robe émeraude magnifique, la mousse est abondante, épaisse et onctueuse, s’il l’on sait bien manier le fouet pour le traiter avec toute la délicatesse qu’il mérite .             How to prepare a Matcha?

            Simple, with water

            The traditional preparation, also known as "Ceremonial", is best with green tea Matchas:

            • Sift in a bowl 2 g of matcha through a sieve or a colander (2 g = 1/2 teaspoon) in a bowl

            • Pour a few drops of cold water

            • With the bamboo whisk, dissolve the matcha into a fine and homogeneous paste by making circular movements against the turn of the bowl.

            • Pour 150 ml of hot water at approximately 75 ° in the preparation, beating in a straight line with the whisk, so as to form a nice foam.

            • Enjoy the invigorating taste and creamy texture of your matcha!

            Matcha Latte

            • Prepare a matcha "base" by following the first three points of the ceremonial matcha recipe

            • Heat 150 ml of milk and whip it with a milk frother (excellent with oat, almond or coconut milk) 

            • If you prefer sweet drinks, add honey or sugar to hot milk. 

            • Pour the milk and the foam into your matcha tea, continuing to whisk everything together using the milk frother.

            • If you want a cold drink, do not heat the milk. You can also add ice cubes.

            Matcha bowl

            For two people : 

            • Pre-freeze 3 bananas, peeled and cut into pieces

            • Mix the frozen bananas with 100 ml of coconut milk until a smooth consistency is obtained.

            • Add 4 g of matcha powder to the blender

            • Transfer the smoothies to bowls and decorate them with granola, seasonal berries / fruits, nuts or chocolate

            • Your quick and healthy breakfast is ready!
